Nishime — Slow-Simmered Root Dish

Long, slow waterless cooking that brings out deep sweetness and nourishing energy.


Recipe:

1. Place 1" kombu strip on bottom of heavy pot

2. Layer large-cut root vegetables: daikon, carrot, burdock, squash, onion

3. Add 1/2 inch water only

4. Cover tightly, bring to boil, reduce to very low heat

5. Simmer 30–40 minutes without opening lid

6. Season with soy sauce at end


The Magic: Vegetables steam in their own juices. The flavor concentrates. The sweetness becomes extraordinary. This is comfort food at its purest.


Serve weekly. Especially healing when tired, stressed, or recovering from illness.
